Job Summary

We are looking for a skilled and committed Head Bakerto lead and oversee daily bakery operations in our medium-sized bakery. This role is both hands-on in production and strategic in leadership, with responsibilities that include mentoring staff, maintaining quality standards, managing inventory, and supporting the business with cost- and product-related insights. The Head Baker plays a critical role in ensuring efficient kitchen operations while upholding company values and standards.

Key Responsibilities
  • Lead and participate actively in the daily production of bakery items, ensuring quality, taste, and presentation consistency.
  • Mentor and guide the bakery team, promoting collaboration, performance improvement, and a positive workplace culture.
  • Oversee and manage the production schedule in coordination with the Bakery Manager to meet sales and operational targets.
  • Maintain and update recipes, SOPs, and quality standards.
  • Manage ingredient inventory, perform regular stock checks, and place orders to ensure uninterrupted production.
  • Monitor product costing and pricing, ensuring all items meet the required cost-to-price mark-up standards. Inform management and request price corrections where necessary.
  • Propose and introduce new or popular bakery products by conducting trials and obtaining management approval.
  • Ensure the bakery team adheres to company policies, hygiene standards, and operational procedures.
  • Collaborate with Bakery Manager and Directors on product innovation, process improvements, and business strategy alignment.
  • Promote resource efficiency and waste reduction in production.
  • Maintain a safe, clean, and organized work environment in line with food safety regulations.

Requirements
  • Proven experience as a Head Baker or Senior Baker in a commercial or retail bakery.
  • Strong technical knowledge of baking techniques, dough preparation, and baking equipment.
  • Excellent leadership, mentoring, and communication skills.
  • Sound understanding of product costing, pricing strategy, and inventory control.
  • Ability to manage staff performance and enforce policies when necessary.
  • Creativity in new product development with attention to customer trends and preferences.
  • Well-organized, reliable, and able to work under pressure in a fast-paced kitchen.
  • Physically fit and able to handle the demands of a production kitchen environment.
