Responsibilities:

• Perform duties of an Assistant Butcher.
• Take on a supporting role to conduct on-job training for new Assistant Butcher, working with Senior Butcher/Team Lead to improve on their performance.
• Assist the Senior Butcher/Team Lead with preparing and portioning cut meats according to established schedule.
• Prepare meat with special requirements.
• Assist with the estimation requirements and order/requisition of meat supplies to maintain inventories.
• Receive, inspect, and store meat upon delivery, to ensure meat quality.
• Assist with recording quantity of meat received and issued and/or keep records of meat sales.
• Comply with production schedule on the variety and quantity of goods.
• Ensure all butchery utensils, equipment, and work areas clean, tidy, and well presented.
• Resolve day-to-day problems and needs concerning equipment and food supplies, detects, and ensures disposition of spoiled or unattractive food, defective supplies/ equipment, and/or other unusual conditions.
• Work in accordance with company standard operating procedures, HACCP plan documentation, SFA guidelines, ISO regulations, etc.
• Ensure all legal requirements are met, including but not limited to, temperature checks, cleaning schedules and food safety procedures.
• Complete assigned tasks to align priorities and expectations and those per production schedule.
• Perform other duties as assigned by the manager in charge.

Prerequisites:

• 2 to 3 years of relevant working experience.
• Must be able to operate band saw, slicer machine.
• Knowledgeable in meat cuts and types.
• Works with an open mind and have flexibility to shift tasks and re-prioritise under different circumstances.
• An independent and motivated individual, who excels in working as a team.
• Able to manage own time and work according to schedule to complete task on hand.
• High attention to quality, details, and specification requirement of product.
