Operational
- Design, develop and update menus with creativity and cost efficiency
- Analyse recipes, determine food, manpower and overhead costs to determine menu pricings for approval
- Check and approve requisitions based on planned menus and estimated food consumption to minimize wastages
- Oversee daily kitchen operations, including food preparation, cooking and plating, to ensure consistent food quality and presentation, and meet established standards and practices
- Manage food costs, manpower costs and inventory
- Works closely with Purchasing to locate reliable suppliers offering competitively priced raw food items while maintaining quality standards.
- Coordinate with management on budgeting, forecasting, and special events
- Enforce food safety and hygiene standards in compliance with local and legal regulations
- Maintain high standard of cleanliness in the kitchens and monitor kitchen equipment maintenance and recommend repairs or replacements
- Manage members/guests feedback related to food quality and presentation to rectify situations and ensure a high patronage
- Check and approve staff work schedules according to operational needs, manpower requirements, and planned events
- Lead, train, and supervise kitchen staff; foster a positive and disciplined work environment
Staff Development & team management
- Ensure all employees report for duty punctually and wear the correct uniform
- Contribute to the development of an efficient team by taking an active interest in their welfare, safety and development
- Ensure that all employees have a complete understanding of and adhere to the Club's policy relating to fire, hygiene, health and safety
Requirements:
- Minimum GCE "O" Level qualification with at least five (5) years' experience in Food & Beverage operations, with practical knowledge of F&B service concepts
- Excellent team player who is able to multi-task and adhere to tight deadlines
- Able to work independently, proactive and highly meticulous
- Strong people and communications, both verbal and written
- Possess thorough knowledge of the beverage list
