Key Responsibilities:
1. Prepare and cook authentic Lanzhou beef
noodles, including hand-pulling noodles,
boiling, slicing beef, preparing broth, and
assembling dishes.
2. Maintain consistency and authenticity of
the beef broth, chili oil, and spice blends.
3. Manage ingredient quality, inventory
control, and kitchen efficiency.
4. Supervise and train kitchen assistants or
junior chefs.
5. Ensure all food safety, hygiene, and
cleanliness standards are strictly followed.
6. Work closely with the restaurant manager
to improve menu quality and operational efficiency.
7. Adjust recipes and flavors based on customer feedback to maintain a high level of satisfaction
Job Requirements
1. Education:
Secondary school or above. Professional culinary certification is an advantage.
2. Experience: Minimum 3 years of proven experience in preparing authentic Lanzhou beef noodles. Must be familiar with the traditional "five elements" of Lanzhou noodles - clear soup, tender beef, chewy noodles, red chili oil, and green garnish.
3. Skills: Proficient in hand-pulled noodle techniques. Skilled in soup base preparation and flavor balancing. Capable of working efficiently in a fast- paced kitchen environment.
4. Language: Basic Chinese communication required; English proficiency is an advantage.
5. Personal Qualities: Strong sense of responsibility and attention to food quality and hygiene. Team player with good communication and service attitude. Willing to learn and adapt to Singapore's food industry standards.
